Can't you just set up a generic postscript printer for this, and shove it
all into a file?

Hold on!! EASIER WAY (d'oh!)

Set up a generic postscript printer. It doesn't matter where it points to,
just select 'Print to file' when printing. Add a PS extension et voila,
postscript (just tested it. It does work, but I have my Epson Stylus 640
set up as generic, and used that. Works just as well!)
