For SMTP: QMail or Postfix.
Both secure, fast and easy to configure.
You'll likely be able to find packages for Postfix on Mandrake (or any
other distro).
Due to QMail's author, Dan Bernstein, having a slightly odd
requirement to have qmail installed installed in /var/qmail/ and his
licence that QMail be distributed unchanged (i.e. patches seperately)
it's unlikely you'll have to compile from source - not difficult.
See http://cr.yp.to/qmail/dist.html on that one.
I was looking at using Postfix, since it's now included with RH8.0,
but I'm so used to QMail, I just couldn't be bothered changing right
now :-)
I've not got an experience with POP3 daemons, so I'll let someone who
knows what they're talking about answer that one!
Cheers.
Baz.
