Debian is very easy to install. I've had a working Debian install in
less than 30 minutes, from scratch.
Sure you don't get the fancy graphical installers, and you have to know
what hardware is in your machine as there is no automatic detection.
I've recently been setting up a Redhat server, and I'm quite impressed
with it. It's only RH 7.3, but it's running very well. Easy to set up,
but the CLI tools are not quite as pollished as Debian.
I'm actually setting up a web based email service. Once its up and
running, I'll announce it here so people can take a look.
I'll be offering free lifetime accounts to a limited number of people
who help me test the service as well.
