but some of the websites I've seen for the HPT404 have screenshots of
raid configuration being done in bios! There is a bios chip on the
HPT404 which you can see in the screenshots, e.g.

I don't see any reason you couldn't use the channels as ordinary IDE
channels and use software RAID on top (though as far as I can tell that
is exactly what my onboard RAID does not allow me to do), but it must
also be possible to build a RAID array in the bios and use that in linux
as if it were a single disk.
