Well, didn't you say you wanted to run as a headless box? You
don't need X, desktops or anything! If you're used to GUI
configuration stuff, you can use the webmin module for samba. It is
relatively easy to configure using ssh and vi, tho'...

Nothing. It's a server :-)

If you need X, you can forward it over ssh.
From your message, it seems that what you really want is a dektop
computer _with_ a samba server running on it. If you plan to go down
the Debian route, note that it's not particularly straightforward to
set-up, but that you can throw Knoppix in, install in in the HD (or
use it to serve SMB shares. See the sambashare command).
