[Sheflug] Newbie question: Mounting a fat formatted drive

I'm building a Suse server for home and I want to reuse some of my old hard
disks for central filestore/webcache. However I'm not sure what data is on
them. If I build the server then add the hard disks (one at once via a
drive caddy) how do I go about accessing the data on the drives to copy it
to my linux box? Can I carry on using the drives fat formatted so that I
can put them back into a windows machine should I require to transfer data
back that way?
