I use dovecot for my IMAP mail (running on an OBSD sparc64) I've got it set
up so that it delivers mail to the users home direcory in ~/Mail . Inside
there the folders are specified by hidden directories with dots to separate
the subdirectories. Eg.  ~/Mail/.computing.linux.sheflug/ with each message
as a separate message. This is using maildir format. Also just found out
that when the home directories aren't available it will defaults the
delivery or mail to /var/mail/.

I've never used UW-IMAP so I'm not sure how you'd set it up.
