There is, although I may be teaching you to suck eggs, a very active LTSP
mailing list on which many of these questions are answered, although not
always in a very useful way.  For example the question which gets asked over
and over is the "how big should my server be?" one and this of course
depends on the applications you intend to run, the number of users and the
number of concurrent users.  However many users have given examples of their
server specifications and the number of users they support.  There is an
LTSP distribution with all the required stuff preinstalled which may make
evaluating the system less problematic.

As for X problems on old monitors you can set the resolution and refresh
rate (if I'm not mistaken) for each PC by mac address so you can be sure
that each individual screen gets the best refresh rates/resolution.  I know
I initially had problems with this as the default set was higher than my old
monitor would take.
