Outbound relay, mx relay, receiver (and if so, POP3, IMAP or whatever) -
your choice?
DNS etc is someone else's problem. We'll be using exim but would be happy to be to take recommendations for the receiving end.

Requirements are that it should be secure, stable and easy to understand but I suppose that goes for everyone really. Don't know how much those requirements are mutually exclusive (particularly the easy to understand bit)

I can dive into the man pages of whichever package (although they often seem to assume a large amount of prior knowledge). Is there a decent guide which goes through the whole process of setting up a mail server anywhere?
