Moving to either should be easy. But the trick is to move from Outlook
to Mozilla on *Windows* first - mail applications on Windows can easily
read Outlook stuff because it's built into the OS; it's a lot harder on
other platforms.

So, once you've installed Mozilla (or whatever) and imported your mail
from Outlook (and contacts and things, presumably) you will then have
your mail in a fairly standard format (where it actually is stored
varies from Windows version to version, but [for example] the Mozilla
accounts panel will tell you the filesystem folder it's using). That can
then be transferred to a Linux system, and you should be able to access
your mail there.
