fetchmail is a bit ropey. Postfix is as good as it gets though, really.
fetchmail isn't really a transport agent though (although sometimes it
behaves like one).
postfix v. exim - well, postfix is a much simpler system. If you're
learning about MTAs, it's probably the best place to start (qmail is
similarly simple, but you learn bad habits and it's not free software).
exim is slightly baroque in places (although, exim v4 is much better in
that respect) but more complex setups are easier in exim than postfix.
Debian-style systems tend to use exim as their mail agent (although,
Ubuntu uses postfix); others often use postfix (Fedora is still sendmail
based though, since RedHat traditionally used it and it's not anything
like as bad security-wise as it used to be)
