Well, not entirely sure about the telephony side of it, but if you want to run two networks then you need to be sure you have subclassed the two networks correctly
e.g.

use 192.168.49.xx for eth0
use 192.168.7.xx for ppp0

Not too hot on dhcp server configs but would you need to run two daemons, one for each network?

And given they are meant to be operating on separate interfaces configure each daemon to only attend to the interface it's meant to be attebding to?

has anyone tried this before?

Yes I know that it's overkill to run dhcp when there is only ever going to be one unit attached. I'm testing my dhcp client SW you see :-)
