I use XFMail, which does allow such things. You can arbitrarily
edit a stored message, including removing/adding attachments.
You can set up a list of as many different "From:" identities
as you want, of which one will be a default, but by clicking on
the "From:" button when composing you can pick any of the others.
However, at least in the version I have, it handles PGP but I
can't say anything about GnuPG; and it uses MH mailbox format
rather than maildir.
One aspect I find very useful is that you can open different
messages at the same time, in separate windows; and likewise
if a message has several attachments you can open each of these
in a separate window.
