Simon,
In kubuntu (maybe a different place for your distro),
under /etc/X11/xkb/keycodes you will find an entry for mackintosh keycodes. I
assume the numbers relate to numbers given for the symbols. At a guess you
would select mackintosh as your keyboard and alter the number for a given key
to give the right symbol etc.
Not saying this is the correct way to do it but I thought it may be a
possibility.
