MusiXTeX:

"MusiXTeX is a set of macros and fonts that lets TeX typeset
music. To use it, at a minimum you must copy the macro and
font files to the right directories in your particular TeX
file structure, have the binary musixflx available to run,
and have a TeX input file containing the proper commands.
It's a three pass system: TeX, musixflx, then TeX again."
This is doing it the hard way (and you'd better be used to
using TeX as well). It's based on preparing a text file which
describes the musical score; with the MusiXTeX macros, TeX can
then typeset the score. However, it seems there is a GUI-type
front-end for it:

Another text-file input system. Check out the website for details.
MUP:

This too starts with a text-description (in very compact
symbolism) of the intended musical score. The resulting
typeset output (PS) is of excellent quality.
It's not free, but shareware: you get a free trial, and you
pay $29 for a once-and-for-all registration.
I've used it a lot myself, and like it very much.
