For commercial providers: I don't know if they cover Linux, but I'd checkout the Training Foundry (was the IT Foundry) in Sheffield and nti in Leeds... if they don't they might still know who does.

I'd second the Access Space suggestion, get along there and volunteer your services and I'm sure in return you will pick up a lot of useful knowledge.

It isn't the fastest way to learn but it is a real way as you are dealing with live systems with live users rather than a lab with pretend users.
