I'd second the Access Space suggestion, get along there and volunteer your services and I'm sure in return you will pick up a lot of useful knowledge. Can anyone recommend any Linux Sys Admin training courses for a Linux n00b in or around Sheffield? For commercial providers: I don't know if they cover Linux, but I'd checkout the Training Foundry (was the IT Foundry) in Sheffield and nti in Leeds... if they don't they might still know who does.http://www3.shu.ac.uk/TrainingFoundry/ http://www.ntileeds.co.uk/ I'd suggest phoning both too.Alternatively somewhere like Access Space may well be able to offer something or give pointers if not,http://www.access-space.org/
It isn't the fastest way to learn but it is a real way as you are dealing with live systems with live users rather than a lab with pretend users.
