Why are you running separate xinetd processes? I've never heard of an
[x]inetd process failing, that doesn't prove it can't, but it seems
likely to me that you should be worrying more about other problems.
Or are these separate hosts? Why do you have the "bind" parameter
specified? Do you actually have multiple interfaces on a single host?
Are the interfaces properly configured to those IP addresses? How are
the students supposed to refer to these services, using IP addresses
or host names? If names, are they properly registered to the IP
addresses you give here in the DNS?
The defaults clause seems like an odd place to put the log file name.

Look at the xadmin, servers, and services internal services. Both
Perl and Python provide telnet modules if you need a script that
telnets to these services and examines their output.
