Disconnect the keyboard - no problem. Only problem there maybe is on a reboot.
You may have to go into your BIOS settings and set ignore keyboard or similar,
otherwise it might object and not boot.

You can also configure your kernel to use a serial console. normal monitor
output and keyboard input is redirected to/from one of the serial ports. Wire
this up to a null modem cable and connect to another machine (or old fashioned
terminal) running kermit or similar and you have a console on your headless
machine.
