I haven't read 2822 in that much detail, but the originator's address
should be in the From: header; if the list server's address appears
anywhere, it should be in the Sender: header (i.e. the list server sends
the message on behalf of the originator).  Bounces go to the envelope
sender, which you *should* see as the Return-Path: if you're looking at
the full headers in your mail client.  There have been religious wars in
the past over (misguided IMHO) list maintainers who (mis)configure the
list software to rewrite the From: header, which is probably where the RFC
is coming from.

As for this particular list, the list server inserts X- headers in each
message so that it knows it's seen that message before.  Vacation notices
are a fun topic.  I see them as delivery status notifications, and they
should therefore go to the envelope sender, which in this case is a
special address designed to handle such things; if you send back a certain
number of these things within a certain period of time, your subscription
will be set to vacation mode automatically.
