James if you can get in as root and have already created a new user, simply 
open up a root shell and type "passwd username" to set the new users password 
to whatever you want.  No idea why Mandrake messed up on the install though.  
I use Mandrake 8.1 and never had that problem, but then again I've not got a 
USB keyboard either.
