I go with the KDE but also have a look at OO with the options set to large 
Icons.... sounds stupid but I get a different, more positive, reaction from 
people when they see OO like this first time. 

My other thought is produce a quick start guide like you get with some 
'bought' applications. One page that can sit on the desk beside the user and 
walk them through common tasks. Finally download the Star Office user guide 
plus the network guide and so on. These are in pdf format you should be able 
to put a copy on each machine. Just explain the difference between star 
office and OO.
