As well as IRC and IM that's already been mentioned, there's also
traditional telnet-based chat servers, e.g., Ew-Too, PG+ and NUTS. See
http://www.ewtoo.org/ for Ew-Too/PG+ and
http://www.ogham.demon.co.uk/nuts.html for NUTS.
(not sure what's happened to Ew-Too though as it looks like the site's
currently down).
