You can accomplish this with LVM, or even RAID. I have used LVM and it
allows you to create partitions independently of the physical drives
being used and they can often span several drives. RAID in one of it's
configurations allows you to chain several drives together and it will
alternately store data on each drive. Can't remember the RAID number
though.
Google for LVM and RAID and there are loads of howtos out there.
