There's a good listing of educational software for Linux at Ofset -
Organization for Free Software in Education and Teaching, based in
France.
They produce a Knoppix style live CD which you can download. A list of
installed packages can be found at:

If there's a particular piece of software missing that you'd like to see
for Linux, then it's possible that we could collaborate in developing
it.
