gconf-editor is a nice GUI interface, with neat touches (like, being
able to set a value to the default as defined by the schema).
Gnome admin lockdown doesn't provide you with huge numbers of options,
although you can use file permissions on Gconf keys too (for example,
making something read-only can stop users setting that preference,
although it's a bit coarse-grained). It's probably going to be a lot
better in 2.8, and there will probably be an admin tool for doing common
stuff without grovelling around in gconf too much.
