It's a bit like samba, and note that I do not present myself as
a knowledgeable person in appletalk stuff, but support for aplletalk is
built into the kernel, netatalk is used to serve files. So you compile
your kernel with Appletalk support and then configure netatalk to
(presumably) listen on a port for requests. I suppose you'll also have
to do some authentication stuff.
