[Sheflug] Parallel running mail server - HELP!!!!

I've just set up a new mail server using Courier 0.37 (I think) with all the
bells and whistles like pop3, imap, webmail, webadmin etc to replace our
aging qmail server. What I'm trying to do is to take certain email addresses
and forward them from the existing server to the new server as well as
leaving messages on the existing box in case of problems. (For those that
know qmail, I've edited the respective ~HOME/.qmail files to include an
additional forwarding line under the ./Maildir/ entry).

The problem is that whatever I do in terms of specifying acceptable domains
on the new Courier server, because the default mail route is to relay
through the old qmail server, any mail which gets routed to the courier
server ends up looping between the two boxes, and eventually gets bounced
(after 50 hops I think).

Has anyone any suggestions? I appreciate that no-one is likely to have
attempted this configuration directly themselves, but if anyone has any
clues as to where I could start looking, it would be appreciated. Otherwise,
I'm going to have a hell of a job testing the new mail server without
actually putting it live after having created (albeit automatically),
150-odd user email accounts on the beast.

How do people normally test replacement mail servers?

All that is assuming of course that a set of bounced emails last week didn't
remove from the list!
