OK, this might be a bit of an off-shot, but if your users only do
simple letters without anything else (you know, the old fashioned way
of doing things: a document is a combination of paragraphs, sometimes
you change fonts, sometimes you don't &c...), and you have old kit,
abiword might be able to help out. It is fast and small, but it is
still under heavy development. It doesn't support tables, but other
than that... Well, give a try :-)
On the spread sheet front, gnumeric does a reasonable job taking
little resources.
Of course, you can get everyone to use vi, but :-)
