Slackware or Debian maybe, given that it wasn't a huge spec. They both
aren't too hard to install, but are lightweight. My preference is for
Slack (I've got complaints against Debian ... see the list archives).

Thing is it may be a bit of a learning curve to what you're used to as
neither hold your hand in the way that SuSE/Mandrake/Redhat do (or claim
to do).

Given that you may end up needing to install some things manually (I don't
think Slack comes with exim, but I can't remember for certain; Debian
probably does), on a muppet-rating scale of Gonzo to Kermit, where do you
think you fall?
Based on the above scale, I'd definitely say Animal ;-)

Since there shouldn't be too much nefarious hardware around (no sound card etc) I'll probably go for Debian.
It'll be a good(?) learning experience as I've previously only dealt with an early version of Mandrake (6?) and SuSE.
WRT to security, I think something which installs the minimum by default would be preferable as I wouldn't be too confident about knowing which services not to run etc. Better to have to install bits you need than decide which bits you can afford to be without IMO.
