Hi Steve

I've not used Mandrake for a while, but if I remember right all the (non-X) services are started from the /etc/rcX.d (where X is the run level) folders.
They should contain links to scripts in the init.d folder and have names something like KXX<service name> (the KXX, just sets what order they start in). All you need to do to stop a service starting is delete the link in the folder for your run level.

As for the NVIDIA driver problem I would advise changing the X config to use the normal VGA (or SVGA) driver just to get to X started as this usually works.
