 Well, I solved this one myself - turn out apcupsd (the UPS daemon) had
locked /dev/ttyS0 - the port I had the modem on.

 apcupsd doesn't actually need that port, since it's getting all of it's
info via ethernet from flux, which has serial line (via it's ttyS0) to
the UPS itself.
 Just changed the config to use ttyS1 on noodles.

 IP masq didn't work to start with - flux still thought it was the
gateway, even although I'd used linuxconf to change it.

 Oh, well..out with route (again). Quick this time - I obviously learnt
from the last hassles I had!

 So, noodles is now working. Just need to config mserver and move the
dnscache to noodles and it'll be perfect.

 *Looks chuffed with himself*
