Andy Hurst has come up with the answer: I had to put SANE_BACKENDS="epson" 
into /etc/make.conf and then reinstall sane-backends. Many thanks to him.

Now I suppose I should ask for the documentation to be brought up to date, 
if I can find the way to do that.
