You might then consider using Debian Sid, the permanent name of the
unstable distribution, which I am told essentially has you running
Ubuntu without the hand-holding and the like that it provides. Don't get
me wrong, I think Ubuntu is the best way to get people using GNU/Linux,
but if you know what you are doing then Debian Unstable looks like a
good choice.

OK, that seems like it could be an option. Do you know how often packages in sid break? I assumed unstable implied occasionally an upgrade would break parts of the system, is that right?
